A Cutter Above the Rest: Best Fish Sandwich in Barbados

It’s been a year. Three hundred and sixty-five days since I chomped down on a fish cutter. This wasn’t my first time having a fish sandwich in Barbados, but this particular sandwich from Caboose tapped into tastebuds I didn’t know I had.

It was that time of day between lunch and when the traffic becomes thick with commuters. The magic hour, when you could get from Speightstown all the way south to Dover Beach in less than an hour. But then I saw it. Across the water, on a plot of grass, a propped-up fishing boat with a bright green and blue hull floated above a crowd. What were they in line for at this time of day? Only the best fish sandwich in Barbados at a place called Caboose.

Between salty buns, I took a bite of the tastiest, perfectly fried fish, garnished with cheese, tomatoes, lettuce, special sauce, and, the pièce de résistance, a fried egg. The owner of Caboose, Wayne Francois, created this mouthwatering touch to his “loaded” recipe with cheese and a perfectly fried egg over the fried fish. It’s worth the extra five Barbadian dollars. And since I was already adding extras, I paired the cutter with a rum punch. I was in Barbados, after all.

I watched the traffic build up from my spot on a picnic table, surrounded by a motley crew of visitors from as far as Australia and locals as close as down the street. “This sandwich is so good,” I said between bites to no one in particular, but everyone nodded their heads with mouthfuls of cutter.

I haven’t stopped thinking about that sandwich ever since.
